Ingredients
1 12 oz. package of cleaned and cooked Jumbo Shrimp
3 peppers - green, red, and yellow (adds color) sliced thin
1 vidalia or sweet onion ( sliced thin)
2 Tbsp. butter or margarine (for sauteeing)
1 4oz. can mushroom pieces
1 8oz. can diced tomatoes
1 Tbsp. fresh minced garlic
1 4 oz. can tomato sauce
1 lb. penne pasta
Preperation
clean and cut 1/2 of each color pepper
clean and cut onion
I like to slice mine in my food processor for thin strips
Sautee onion and peppers in skillet till soft
Add Tbsp. garlic
Add mushrooms
Add diced tomatoes with juice
Add tomato sauce
Simmer for 10 min.
Cook penne pasta for time allowed
Add a little oil to your water for softness
and to reduce sticking to pan
Cut tails off of shrimp and add to sauce
Let simmer while pasta is cooking on low heat
drain pasta and serve sauce over pasta...
