Ingredients
Pizzelle's --12 Lg. eggs, 2 1/2 C. Sugar, 2 C. Vegetable Oil, 2 TBSP. Cocoa, 2 tsp. Anise
Oil (pure not extract), 2 tsp. Baking Powder, 5 C. Flour
Filling-- 1 8 oz pkg. Cream Cheese (softened), 1/2 C.
Butter (margarine- softened), 2-3 C. Powdered Sugar, 1 tsp. salt, 1 .125 fl. oz Lorann's Cherry Flavor Oil, 1 4 oz. jar Marachino
Cherry's, 2-3 drops Red Food Color.
Directions
Heat Pizzelle iron up and spray well with non-stick cooking spray.
Pizzelles-- Combine eggs, oil and sugar in a bowl mix
thoroughly, add anise oil, cocoa and salt. Blend thoroughly, gradually add flour and baking powder, mix well and drop onto
pizzelle maker by tsp. Cook about 2-3 min. and remove with fork. Quickly roll the pizzeles up while hot and set aside to fill
later.
Filling-- Combine softened cream cheese, butter, salt
and cherry flavor oil. Gradually add in powdered sugar to make a thick icing consistancy. Chop marachino cherries and add
to filling stirring well. Add 2-3 drops red food color. Then begin filling the pizzelles.
To Fill-- You can either use a cookie making tool or Wiltons
Icing Bag. Fill till you can see on both ends, set aside they are done, enjoy....
Yields about 10-12 dozen.
You can also make this recipe with a plain vanilla pizzelle, instead of adding cocoa add 2 tsp.
lemon extract and 1 tsp. vanilla. You can also use any flavor oils. They can be found at the local pharmacies.
