Stuffed Zucchini Bake

It's summertime and the gardens are going crazy with many types of veggies. This year I have harvested 12 zucchini from my garden and needed a new way to prepare them, I have fried them, battered and  baked them into a bread and I wanted a different taste so a good friend of the family Liz Wilson gave me a great recipe that will truly hit the spot of all the zucchini loving folks. If you enjoy stuffed peppers you'll really enjoy this recipe.

Ingedients
 
1 Lg Zucchini
1 Lb. Italian Sausage (not links)
Pasta Sauce
( homemade is best but any will do)
Grated cheese
 (parmasean, romano, any)
 
Preparation
 
Preheat oven to 350*
 
Cut Zucchini in half and remove seeds from center
this will leave a hollowed center for stuffing
Don't remove too much of the center though
(Cut stem off) and wash well
 
Brown the sausage
Spoon into the center of the zucchini
Place both halves into a greased baking pan
Cover with sauce and cheese
 
Bake for 30min.
Remove and enjoy
You can slice it and share
 or eat like stuffed peppers
depending on size of your zucchini.
