Kat's Tantalizing Zucchini Nut Bread

This year Scooter and I decided to put in 12 new zucchini plants into our Community Garden. We have harvested 8 so far and I have been trying new recipes with them. This recipe is a sweet and tasty treat for all you bread lovers. I hope you enjoy my newest recipe....

Ingredients-   Preheat oven to 350*
 
3 C unpeeled and shredded zucchini
2 eggs beaten
2 C sugar
2 tsp cinnamon
3/4 C oil any (I cook only with Canola)
3 C flour
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1 C shredded coconut
1 C raisins
1 C ground walnuts
 
Combine
 
Beaten eggs with sugar and cinnamon
Add baking soda, Baking powder and salt mix well
Stir in flour then add coconut, raisins, nuts and zucchini
Mix Well and pour evenly into two greased bread pans
Bake for 55-60 min.
Remove from oven and remove immediately
 from bread pans to keep from sticking.
Let cool and enjoy....
