INGREDIENTS:
1 2-4 LB CATFISH
Stuffing:
4oz butter or margarine
1/2 C. green peppers
1/2 C. scallions/ green onions
1/4 C. celery
1 C. any seasoned bread stuffing
1 tsp. garlic salt
1/2 tsp black pepper
PREPERATIONS:
Clean catfish well, remove fins, head, mud vein, you want to leave the fish butterflied for stuffing.
Broil catfish for 20 min or you can bake @ 350*
Stuffing:
Sautee butter, peppers, onions and celery
Add garlic salt and black pepper
stir in stuffing mix
Once softened open catfish up and stuff mixture in middle, fold other side of fish back over.
Melt 1/2 stick butter of margarine and pour over catfish in pan.
Reheat for another 5-10 min and garnish with parsley.
