Grandma's Old Fashioned Raisin Filled Cookies

This is a really old recipe that has been passed done through our family and is one of my favorite holiday cookies, hope you enjoy them as much as I do.

Ingredients
 
2C sugar
1C shortning
1 C.sour milk or sour cream
1 tsp baking soda
1tsp baking powder
1tsp vanilla extract
5 - 5 1/2 C flour
Filling
1 box raisins
2Tbsp flour to thicken
1 C. sugar
 
Directions for Filling
 
Boil raisins for about 2-3 min in small amount of water
beat with mixer to chop up raisins fine
add sugar and flour to make a thick filling set aside.
 
Directions for Dough
 
In a bowl combine sugar, shortning and sour cream or you can use 1 c. milk + 2tbsp lemon juice to sour milk, vanilla
beat well then add baking soda, baking powder mix well
gradually add flour to form a sticky dough, refrigerate overnight.
Roll dough out on a floured board to about 1/2" thick, you can use a drinking glass or cookie cutter to cut dough into 3" circles, 2 per cookie. The top could be solid or you can cut a 1" hole in the center so the filling can be seen.
Preheat oven to 350*
Place solid circles on cookie sheet, fill with a small teaspoon full of raisin filling in the center then place second circle on top. Make sure you pinch the edges to keep the cookie together. Bake for about 8-10min or until golden brown. No need to spray pan, just remove while hot and they will not stick. Let cool on cooling rack or baking cloth for 2-3 min before eating, filling is really hot.
yields about 3-4 dozen depending on circle sizes cut.
